Gifu Ramen Special

In cooperation with the Gifu Prefectural government, Ippudo’s west side location will feature a special Gifu-inspired lunch. Using soy sauce produced in Gifu Prefecture, the heartland of central Japan, Ippudo’s ramen master Fumihiro “Foo” Kanegae will create a different style of ramen for each day of this three-day event. On Tuesday, September 6 guests can enjoy shoyu (soy sauce) ramen with seafood broth. Shio (salt) ramen with shellfish (crab) broth is on the menu for Wednesday, September 7. Chef Foo will serve a choice of shoyu or shio ramen with chicken broth on the final day, Thursday, September 8.
The ramen will be served in a designer bowl made in Gifu. Each dish will come with a Gifu-specialty Hoba miso rice ball and a small complimentary glass of Gifu sake.
